Runing version 4.8.0

Outlook Settings -> Allow Word as Editor ... -> Save

But it's not saved.

This has been identified as a bug in version 4.8.0 due to changed error handling.

Please get Cockpit 4.8.1 from this location:
www.officeaddon.com/481/cockpit.exe

.. and sign.exe 4.8.1:
www.officeaddon.com/481/sign.exe

This bug seems to have reappeared in version 4.8.5 and 4.8.6!

Same thing, set allow word in the Cockpit, set word as the editor in Outlook, run sign.exe, word is no longer the editor!
